WINEMAKING
Made using the traditional Champenoise method, starting from a base wine from a selected harvest that ensures the optimal balance between acidity and alcohol content, as well as a better expression of the Albariño varietal. Using the traditional method, the second fermentation is carried out in the bottle, aging on its lees for 24 months until the moment of disgorging. This long aging provides complexity in the aromas, roundness and a fine, perfectly integrated bubble.
TASTING NOTES
VISUAL PHASE: Straw yellow with golden reflections. OLFACTORY PHASE: Medium-high intensity, with balsamic and lactic notes. Presence of ripe fruit. Aromas provided by its long aging on lees, 24 months. TASTE PHASE: Wide mouthfeel, with a retronasal of pastries, bakery and at the same time round with a well-integrated bubble.
