WINEMAKING
Verdejo grapes are harvested at their optimal ripeness. After gentle pressing, the must undergoes fermentation partly in French and American oak barrels, where the wine then remains in contact with its fine lees for several months. During this period, periodic batonage is carried out to enhance the wine’s body, complexity and structure.

TASTING NOTES
Straw yellow colour with golden reflections. The nose is intense and complex, combining aromas of ripe white fruit, citrus and herbal notes typical of the verdejo variety, together with hints of vanilla, toast and light spices from the oak ageing. On the palate it is broad, structured and elegant, with balanced acidity that supports its volume. The finish is long and persistent, with the subtle bitter touch characteristic of verdejo.

FOOD PAIRING
Ideal to accompany grilled or baked fish, seafood, rice dishes, pasta, poultry and white meats. It also pairs well with semi-cured cheeses and Mediterranean cuisine.
